Buffalo Chicken Fettuccine
I love pasta! And I especially love a good fettuccine!! I don't just love the taste of a good fettuccine, but I also love that it's a fairly easy dish to prepare.
I raised 3 boys, so coming up with hearty meals that appealed to the whole family with leftovers that worked great for lunches could be challenging at times.
Buffalo Chicken Fettuccine quickly became one of my "go-to" recipes! And now I'm sharing it with you so you can enjoy it also.
I roast the veggies for this recipe - if you've never roasted vegetables before then you really need to try it! Roasting brings the flavors out so much more than other methods!
One of my favorite seasonings in the whole wide world is Watkins' Garlic Peppercorn Grinder! If you want to give this a try, you can order it HERE. Order it online if you are in the US or Canada and have it conveniently shipped to your door with very reasonable shipping rates. Take a peek at the great organic spices they have while you're there, like the Dried Cilantro that I also use in this recipe.
Here's my recipe in PDF - it's printable and can be easily saved to your computer.
How can you reheat this, you ask? It re-heats great in the microwave, but I find I get the most flavor by either frying it in a frypan, or putting it in a casserole dish and heating it in the oven. Note: you generally won't need to add much, if any, oil when reheating the Fettuccine in an oven or in a fry pan because of the butter and whipping cream already in the dish.
I hope you enjoy my Buffalo Chicken Fettuccine as much as I do! Feel free to share your thoughts in the comments and please share any variations you've made to the recipe so others can try them also!
