Scalloped Potatoes
Scalloped Potatoes are one of my favorite side dishes for family dinners. This recipe is easy and relatively inexpensive to make.
This recipe makes an 8" x 8" pan, but you can easily double it to make a 9x13 pan. Reheat leftovers by covering them and placing them in the oven. Reminder - if you are using a ceramic or glass casserole dish, place it in a cold oven to avoid cracking it.

Don't be afraid to change up the taste of the recipe from time to time. As I mention in the recipe, optional ideas are:
~ When adding cheese, also top with crumbled crispy bacon and/or green onions. You could even layer these in with the potatoes and onions.
~ Sprinkle your favorite spice combinations on top of the cheese, or mix them into the sauce. I sprinkled Epicure’s Nacho Cheese mix on top of the cheese in the picture. Find the Nacho Cheese mix (when available) and other topping ideas at: tammirohatyn1.epicure.com
